Round 2 of “The Next Food Blog Star” is to cook outside your comfort zone. Cheapeats is all about eating out on a budget. Those spots that serve up tasty and healthy meals. No fast food here.
Why not meet that challenge by taking ingredients purchased at the local Farmer’s market and my cupboard to put together a fabulous meal? My creation…..Thai Mussels.
Thai Mussels
1lb Mussels – $3
juice of 1 lime – $.75
Olive Oil – Cupboard
1tsp Sesame Oil – Cupboard
1 Red Chile deseeded & chopped – $.50
1 stalk Lemongrass (cut in 1/2 and bruise with back of knife) – $1.25
1tbsp chopped or grated ginger – cupboard
2 Scallions chopped – $.60
1.5 can Coconut Milk (regular or lite )- $4.44
1 cup Jasmine Rice – $.54
1 clove Garlic chopped – Cupboard
Handful Cilantro chopped – $.50
Salt & Pepper – Cupboard
Prepare rice as directed on package but substitute 1 can of coconut milk for water. In a hot wok pour a glug of olive oil. Toss in mussels, garlic, scallions, chile, lemon grass, ginger, sesame oil, cilantro. Keep it moving until all the mussels open. (Discard any that are closed). Add lime juice and 1/2 can coconut milk. Season with salt & pepper. Cover and let steam/boil for 2-3 minutes. Serve immediately over rice.
How does it taste? Mmmm, Mmmm good. Worthy to be served in a restaurant. The grand total???? $11.58 and serves 2 people easy!!!!
